Accor is intensifying its sustainability drive in India with a series of food waste reduction measures rolled out across its hotel network. The group is rethinking kitchen operations through precise buffet planning, live cooking stations, and AI-enabled waste tracking to align production with actual demand.

Properties like Novotel Guwahati limit buffet portions and focus on made-to-order items, while Pullman and Novotel New Delhi Aerocity use the Lumitics Smart Waste Tracker and a ‘No Bin Policy’ in staff cafeterias.
